Kürtős cake

One cannot go through a street festival, a fair (summer or winter) without the Chimney cake or the Kürtőskalács in original. During winter it is served warm with cinnamon and sugar, and during summer - with ice cream. And everyone queues quietly without any complaints, and with a good reason.

It was a challenge for me to make this cake. And I took a bet with the kids that I can make it just like the original.

Now, where was I to find 6 cans of beer? And empty ones. They should be coated with aluminum foil. If I were in Skopje, it would not have been a problem, for my brother Mishko would provide immediate supply. Martin suggested we should buy beer for kids and drink it. What do you mean? - I asked. Kürtős cake

Ingredients:

  • 220 ml. cooled milk
  • 1 tablespoon sugar
  • 20g fresh yeast
  • 500g flour
  • a pinch of salt
  • 1 egg
  • 1 egg yolk
  • 50g softened butter

Preparation:

The yeast grows in the milk. Add the flour and other ingredients and knead (I use a mixer) for 10 minutes. The dough will rise in warm temperature within the hour. The molds are 6 empty beer cans lined with foil and coated with butter. The dough is divided into 6 parts. Each ball is rolled out (see picture) and the can is coated. Slightly press. Sprinkle with brown sugar. The procedure is repeated 6 times. Bake in a preheated oven at 220C for 12-14 minutes. While hot, sprinkle with brown sugar and lots of cinnamon. I love them like that. Maybe add some coconut, crushed walnuts etc...
