Focaccia

If you do not have bread, eat Focaccia .. (in Italian Focaccia).

And for those who do not know how to knead, I have a recipe. For those who do not want to, I have no solution. Mine is the Mediterranean kind, with fresh rosemary, olive oil, coarse sea salt and olives ... it smells like the sea.

I miss my friend Lela very much. I haven't seen her in a long time. Almost a year. She lives in Milan. We talked over the phone today. We had a cup of coffee. We talked about everything, and we even exchanged recipes. “I will make Focaccia today” I say, and she asks me for the recipe. When I was in Milan last year I bought a cookbook: Quick and easy recipes. And it really is one.

Focaccia

Ingredients:

  • 450 g. flour
  • 2 teaspoons sugar
  • 7 g. dry yeast
  • 2 tablespoons olive oil
  • 1½ teaspoon salt
  • Fresh rosemary
  • Olives

Preparation:

Mix the flour with the sugar, add the yeast. Gradually add 400ml of water. Until all water is added, put the olive oil and salt. Add the rest of the water. The dough is liquidy. Leave covered in a warm place to double. Place baking paper in an oven tray, grease it with olive oil and spread the dough over the entire surface of the baking tray. Allow the dough to rise. Make holes in the dough with your fingertips. In a small glass put half a water and 2 tablespoons of olive oil, mix and coat the dough over the entire surface. Sprinkle with chopped fresh rosemary and chopped olives. Bake at 195 degrees for about 25 minutes.
