Lemon Curd

Ingredients:

  • 80 gr. softened butter
  • 150 gr. sugar
  • 2 eggs
  • 2 egg yolks
  • 50 ml. lemon juice

Preparation:

Beat the softened butter with the sugar with a mixer. Add the eggs one by one and the yolks. Add the lemon juice. It is not a problem if lumps appear. Boil on a low heat hob, stirring constantly with a rubber spatula until it thickens like a pudding. Put into a glass jar, cover with cellophane and refrigerate.
