Eggplant dip

I do not know of a dedicated eggplant season. They are always accessible, both in summer and in winter. I love them very much. Also, I love my mum’s eggplant moussaka stuffed with minced meat served with a pie. And the colour is very elegant. When I pick a colour for my nail polish at my manicure, I say eggplant colour. It is a widely used ingredient in Greek and Turkish cuisine. This is a slightly different version of Malijano with crushed eggplant, cheese, sour cream and mayonnaise from the one I usually make.

I eat this creamed dip in a Turkish restaurant. You can find it everywhere. I decided to make it at home and I can say that it truly is my favourite one.

Eggplant dip

Ingredients:

  • 2 eggplants
  • Sour cream 12% fat
  • Olive oil
  • Garlic
  • Parsley

Preparation:

Cut the eggplant into cubes, add salt and leave it for 1 hour to release bitterness. Fry in olive oil and finely chopped garlic and leave to cool well. Stir in the sour cream and sprinkle with parsley.
