Fruit cake

... or sour cherry pie is timeless for me. We have been doing it at home since I can remember. There is no season for it either. Summertime, it is made with fresh ones, wintertime with frozen sour cherries. I have tried other fruits as well, an apricot cake for example is a very tasty fruit cake, but sour cherry cake is somewhat a classic. I made it today. It took me back in time ... ❤

Fruit cake

Ingredients:

  • 5 eggs
  • 150g sugar
  • 300g flour
  • 1 sachet of baking powder
  • 150 ml. cooking oil
  • 200ml yogurt
  • 1 vanilla sugar
  • 30g semolina
  • 500g sour cherry

Preparation:

Beat the eggs well with the sugar as finely as for a cake. Add the sifted flour, baking powder, yogurt, oil and vanilla. Bake the dough in a 24x36 baking tray, previously lined with baking paper. Arrange the sour cherries, this time I used frozen ones which do not require thawing beforehand. I mixed them with the semolina. Then place the sour cherries in the dough. Bake the cake at 180 degrees for 30 minutes (check with a toothpick). Cool the cake well and sprinkle with powdered sugar.
