Cracked Dumplings Cake

This recipe comes from my mother. She would call me on the phone while in the subway and just say: "Take a pen and write this down, it's a delicious recipe I just saw on TV, I'm certain the kids will love it". "But mom, I'm in the subway now, underground you know, how can I write it down?!" - I would say.

It was a regular occurrence. When the children were younger, I spent a lot of time in the car, just driving them around, from school to English lessons, to German lessons, to and from sports activities. Sometimes we would be in such a hurry that they wouldn't have time to eat dinner at home, so I turned the car into a kitchen. I was convinced that if they failed to receive proper and healthy nutrition, they would not have been able to bear the extracurricular activities' burden.

This cake is now one of our favourite ones. It can be quickly prepared and is best when left overnight to chill out, to then be easily cut into cubes. The original recipe is with prunes, and I have made them according to the original recipe on multiple occasions, but sour cherries is my absolute favourite. I love cherry desserts. They are not too sweet and the sour taste flavour is just the twist needed ... 

Cracked Dumplings Cake

Ingredients:

  • 300g breadcrumbs
  • 100g of brown sugar
  • 200ml oil or 50g of melted butter
  • 500g sour cherries
  • 1 tablespoon cornstarch
  • 1 liter of milk
  • 200g semolina
  • 100g brown sugar
  • 3 eggs
  • 1 baking powder

Preparation:

The breadcrumbs are mixed with the sugar and oil (I replaced it with melted butter). Half of the mixture is poured into a baking pan lined with baking paper with dimensions (35 X 25) and is nicely evened. The sour cherries, (I used frozen ones) are boiled in a little water for about 7 minutes and gelled with 1 tbls corn starch previously dissolved in water. Stir gently on low heat and set aside to slightly cool down. Add the semolina and sugar to the cold milk and on low heat stir gently and constantly until thickened. Once thickened, add the eggs, one by one, stirring constantly with a wire stirrer. Finally, add the baking powder. Pour sour cherries over breadcrumbs, and pour the semolina and eggs filling over on top. Smooth evenly and pour over the rest of the breadcrumbs. Bake in a preheated oven at 180 degrees for 30 minutes. Cool the cake nicely and cut it into cubes.
