Hot tea with snacks served in the afternoon has come to the Duchess of Bedford as an idea in order to overcome her "sinking feeling". Since amongst her kind was known to be a sociable person, the Duchess of Bedford invited her relatives to this ad-hoc afternoon tea, in the interim between the main daily courses. So, this afternoon tea has soon become a convivial repast enthusiastically taken on by all nobility.

The custom was soon to be copied by other upper-class ladies from London, who began to design special apparel to meet the occasion. The afternoon tea would start at 4 pm and would finish at 5 pm, hence the name. The beverage used to be prepared in a porcelain or silver teapot, to be poured in fine porcelain cups ...

Fruit bread

Ingredients:

  • 3 eggs
  • 120g sugar
  • 150ml milk
  • 50g butter
  • 250g flour
  • 1/2 bag of baking powder
  • 1 teaspoon baking soda
  • 200g of dried fruit
  • 150g walnuts, almonds
  • Rum
  • Cinnamon
  • Nutmeg
  • Orange peel

Preparation:

Beat the eggs with the sugar as finely as for a cake. Add the softened butter, milk, flour, pastry, and baking soda. Chop the dried fruits (apricots, cranberries, raisins) and pour over the rum. Finely chop the walnuts and almonds. Add the spices. Bake the dough in the oven in a butter greased rectangular mould and bake at 180 degrees for 45 minutes.
