Duck stuffed with dried fruit and mashed potatoes

This recipe is our favourite one at home. It is regularly on the menu, almost every weekend. I find fresh poultry, duck, goose, turkey at the market at all times. And I only buy from one place. They know me too. We talk. And I always buy eggs from the market. They are incomparable to those you find in stores. I usually go to the market on Thursday or Friday. I also bought a shopping trolley bag. I also carry ducks when I travel to Skopje. They place an order with me. I buy them the day before departure, vacuumed duck legs. This is the easiest way for me to transport them. I do not know if you know that you can have duck and goose cracklings. I think goose meat is fatter and heavier. I prepared a goose on Martin’s name day. It is a MUST! I have guests over for lunch for Martin's name day. It is November 11. It is believed that whoever does not eat goose that day, will be poor all year round!

Duck stuffed with dried fruit and mashed potatoes

Ingredients:

  • 4 duck legs
  • Dried fruits (apricots, plums, pears)
  • Salt, pepper
  • Oil

Preparation:

The duck legs should be fresh and not too greasy. They are washed, sprinkled with salt and pepper and filled with dried fruit under the skin. Pour a little oil and 1 glass of water. Simmer quietly on a hot plate in a closed container. I prepare them in Zepter cookware for 1 hour and 30 minutes.

Mashed potatoes are a classic. Mash the boiled potatoes, add 1 tablespoon of butter, warm milk and salt. Mix it with a mixer. You can also garnish it with stewed red cabbage.
