Lemon Cheese cake

I make this cake in 10 minutes. Not a minute longer. Martin adores it. And is very nutritional. Cottage cheese is full of calcium. It is also very good for the liver. The Magyars use it a lot in their recipes. Moreover in desserts. They also have an all favourite dessert. Everyone loves it, both big and small. Cottage cheese on the inside topped with chocolate. They call it Túrórudi.

I was on my way to my home in Skopje. I have just arrived and didn’t even have time to unpack. Myself and kids stormed straight into the kitchen. “You taught them that”, says my mother. And I am ok with it, at least they know to appreciate good flavours. ❤

Lemon Cheese cake

Ingredients:

  • 3 eggs
  • 4 tablespoons brown sugar
  • 500 gr. of cottage cheese or ricotta
  • 300 ml. sour cream with 12% fat
  • 2 tablespoons corn flour
  • vanilla
  • lemon zest
  • 2 tablespoons lemon juice

 

За подлога:
  • 200 gr. ground integral cookies
  • 100g melted butter

Preparation:

Whisk the eggs with the sugar, add the ricotta, sour cream, flour and lemon.

For the base, the ground cookies are mixed with the butter and put in a cake mould, pressed well with the backside of the spoon. Pour the filling on top and bake in the oven at 180C for 45 minutes. It should cool down nicely.
