Gundel Pancakes

The “Gundel” restaurant with its past and outstanding cuisine is referred to in the 19th century, during the Austro-Hungarian monarchy, and is still considered one of the most elite restaurants in Europe. The restaurant is located in Budapest, next to Heroes' Square and the Zoo. I have been there once. I remember eating pancakes. And how can I forget them?! Not that I have not tried pancakes ever, but in such an environment, served in porcelain ... the Gundel pancakes are my favourite dessert, and I often make them. Let's travel through time and enjoy together... The serving plate is a separate story ... Herend handmade porcelain. It carries a background. It was a gift from my favourite uncle Misho for my wedding. I had no idea. When he came to Budapest for my wedding, he asked me about the most typical gift to buy as a souvenir to take home, to be handpicked by me. I chose a Herend porcelain cake stand and a vase designed by Queen Victoria. It dates back to 1826 and to this day such featured patterns are handmade like Victoria, Rothschild, Viennese roses, the Royal Garden, Miramare etc.

Gundel Pancakes

Ingredients:

Pancake butter
  • 2 eggs
  • 200ml milk
  • 3 tablespoons oil
  • 250 gr. flour
  • a pinch of salt
  • sparkling water

 

Filling:
  • 100g. crushed walnuts
  • 70 gr. sugar
  • 70 gr. raisin
  • 100ml water
  • Rum

 

Chocolate syrup:
  • 500 ml. milk
  • 1 vanilla
  • 100 gr. chocolate
  • 3 egg yolks
  • 100 ml. sweet sour cream
  • 50 ml. water
  • 1 cup of tablespoon flour
  • малку рум
  • 100 gr. powdered sugar

Preparation:

The pancakes are prepared in the old-fashioned way (your favourite recipe may work too).

Filling- stir all the ingredients except the rum and cook for 5 minutes. Finally add the rum. Coat the pancakes with the filling.

Chocolate sauce - bring the milk with the vanilla bean to a boil, melt the chocolate in another bowl on a hot plate, add the eggs and milk, whisk well and add the sweet-sour cream (cooking cream), a spoonful of flour, powdered sugar, all is well whipped until thick and add the rum.

Put the topping in each plate, place the pancakes, a little more dressing and sprinkle with chopped walnuts.
