I do not want to write foreign names but I do not know how to translate Ratatouille (rat-a-too-ee). I only know that it is my favorite summer dish. The recipe is French from Nice.

Ratatouille

Ingredients:

  • 500g eggplant
  • 500 g of zucchini
  • 500g tomatoes
  • 1 can of tomatoes
  • Garlic
  • Salt
  • Pepper
  • Basil
  • Thyme
  • Olive oil

Preparation:

First prepare the tomato sauce. Fry a small sized onion finely chopped in olive oil, add chopped garlic and tomatoes. I used a can with chopped peeled tomatoes. Simmer and place as a base in a ceramic or glass fireproof container. Do not peel the vegetables. Chop in circles, it is desirable to have the same size eggplant, zucchini, tomatoes. Arrange the tomato sauce in a circle. Add salt and sprinkle with olive oil. I always use fresh basil and thyme. Bake for 30 minutes at 200 degrees wrapped in foil and bake for 15 minutes without foil.
