Linzer cookie dough is really easy to make. Knead the dough from flour, butter, sugar and eggs. I have tried many recipes until I found the perfect one. Martin adores them. I learnt from him that a linzer cookie topped with chocolate is called Ishler. I have various moulds, but the original ones are these metal ones, like flowers, maybe because they remind me of Daisies. They are the most delicious with apricot jam. In the dough, a zest of grated lemon is obligatory. And I make them with lard from Mangalica. I do not whether you know but Mangalica is a pig, a very unusual breed, very reminiscent of a sheep because of its thick curly coat of hair. It is a mixture of domestic and wild boar. Meat is much healthier than other breeds, has a higher percentage of protein, less fat, half the cholesterol. There are specialized shops on the market with products only from Mangalica such as sausages, greaves, lard.

Linzer Cookies – Daisies
Ingredients:
- 200 gr. butter or lard
- 500 gr. sifted flour
- 1 baking powder
- 1 egg
- Vanilla sugar
- 5,6 tablespoons of milk
- grated lemon peel
Preparation:
Knead the dough from the above ingredients, roll out a ½ cm thin crust and make forms out of the linzer moulds. Half of the dose is smoothed over to be placed as a base, while the other half is with a hole to be put on top. Bake at 180 degrees for about 15-20 minutes. Sprinkle the upper layer of linzer with powdered sugar and cover over the base filled in marmalade (or apricots, strawberries, raspberries).
